Last spring, a Finnish chocolatier working at a well-known shop in Belgium contacted Chloe Doutre-Rousell. She was looking for someone to help her realize her dream of learning more about chocolate by working at a cacao plantation for a month. Chloe referred her to me and after talking with Hugo and Hubertien Hermelink, the growers I work with in Costa Rica, a month long stay was arranged. From everyone's point of view, it was a big success. What she learned in a month is truly impressive and she shares much of it in this account.
