Drying
This picture is from three years ago and shows me and one of the farmworkers
spreading out the beans to dry. The steam coming off the beans will give
you an idea of the heat of the fermentation process. They're hot, pretty
gooey and slimey, and with a strong fruity and vinegary smell. If the
fermentation has gone well there are no funky, goat cheese, or old gym
sock notes.
These drying beds are called African beds and are usually used to sun-dry
coffee. In later years, I've covered the tube structures with plastic
to form greenhouses.
